Apple and forest honey cake with pineapple sorbet
Sorbet:
110 g sugar
54 g glucose
1.5 g stabiliser
215 g water
500 g pineapple
- Mix the sugar, the glucose and the stabiliser and bring to the boil with the water
- Add the pineapple and liquidise
- Pour into a sorbettière and freeze
Cake:
125 g butter
60 g forest honey
peel and zest of one lemon
3 egg yolks
3 egg whites
1 pinch of salt
125 g flour
1 pack of yeast
250 g diced apple
- Beat the softened butter with the forest honey and the lemon
- Gradually add the egg yolks
- Whip the egg white to soft peaks with a pinch of salt
- Fold in the flour, yeast and the apple to the egg whites and finally mix in the butter mixture
- Put the mixture into buttered moulds and bake at 175° C for around 25 min.
